Spanish Rice and Ground Elk

Spanish Rice and Ground Elk

This easy skillet Spanish rice with ground meat is a healthy wild game alternative to hamburger helper.

Ingredients:

? 3 slices turkey bacon

? 1 lb. Ground elk or venison

? 1/3 cup onion, chopped

? 1/3 cup chopped green bell pepper

? 1 tsp minced garlic

? 1 tablespoon chopped fresh cilantro

? 1 can (14.5 ounces) diced tomatoes

? 1/2 cup ketchup

? 1 cup cooked rice

? 1 cup canned or frozen corn

? 1 teaspoon chili powder

? 1/2 teaspoon Worcestershire sauce

? Salt to taste

? 1/3 cup shredded cheese of your choice


Cook bacon and set aside. Cook hamburger in same skillet to retain bacon flavor. Drain most of the grease. Add bell pepper and onion and cook on low-medium heat until soft. Add remaining ingredients, including crumbled bacon. Stir well and brown for 10 to 15 min. Before serving, sprinkle grated cheese on top.
