Smoked Fish Dip or Spread

We have caught a lot of Brookies this year and decided to brine and smoke some. Then we made that into smoked fish spread. Here's what we did:

3 pounds smoked fish, flaked. (We flaked it in a "Bullet" a little bit at a time.)
2 (8 oz) packages cream cheese, softened
1 cup sour cream
1 & 1/2 cups mayonnaise
1/4 cup half & half
4 tablespoon lemon juice
1/2 teaspoon garlic
2 tablespoons finely chopped onion or green onions
1/2 cup finely chopped red and green peppers
2 teaspoons course ground pepper
3 to 4 dashes of Louisiana hot pepper sauce

Mix cream cheese, sour cream, half & half and mayo until well blended. Add remaining ingredients and mix well. Chill and serve with crackers.
