Orange Ginger Trout or Salmon

Combine 1 cup orange juice with ¼ cup soy sauce and 1 tbsp fresh grated ginger. Marinate fish fillets in mixture in a large zipper bag in the refrigerator.

Line roasting pan with foil. Place fillets flat in pan, add marinade. Garnish with thin slices of orange, if desired. Wrap in foil and bake at 350 until done (use a thermometer, or fish should be opaque and flake easily with a fork).

If desired, may be served with orange-ginger sauce. Combine 2 tbsp frozen orange juice concentrate with ¼ cup honey and a little grated ginger. Heat to a simmer, serve sparingly.
