Elk Steak Marinade
with Ginger and Garlic

This recipe is enough to marinate about 6 pounds of steaks. You can put the steaks in freezer bags with the marinade, then pull one bag out at a time for a meal. (See instructions.)

Ingredients for 6 pounds of steaks:

Canola oil 3/4 cup
Vinegar 3/4 cup
Soy sauce 1/3 cup
Worcestershire sauce 1/3 cup
Honey 1/3 cup
Water, cold 3/4 cup
Onions 1/2-3/4 cup
Garlic 1/2 cup
Ginger, ground 1 tablespoon
Elk or venison steaks 6 pounds

Thaw meat under refrigeration.
Finely chop onions and garlic.
In a bowl combine all ingredients except steaks and mix well.
Cut steaks across the grain 1/2 to 3/4" thick. Place the number of steaks you will need per meal in separate freezer bags. Pour well mixed marinate in each bag, dividing it evenly between the bags.

Let the steaks marinate overnight in the bags. Keep one out to cook that next day, then freeze the rest!

Cook on grill, frying pan or griddle on low heat, until desired doneness is achieved. A little pink inside preserves moisture and tenderness of lean wild game steaks. Discard marinade as it will be contaminated by the raw meat. Marinade that has contacted raw meat must be thoroughly cooked before consuming.
