Easy Crock Pot Java and Lime Spiced Elk Roast

Into crock pot throw:

Approximately 1 pound elk or deer roast
4 to 5 large diced potatoes
1/2 large or one whole small onion
3 to 4 sliced, large carrots
1/2 cup of soy sauce
1/4 cup of teriyaki sauce
2 or 3 tbsp of garlic, minced
1-2 tbsp of fresh cilantro
1-2 tbsp of Italian seasoning mix
1 shot of espresso coffee or about 1/2 cup of strong coffee
1 teaspoon salt
1 1/2 teaspoon sugar
A little black pepper
¼ cup lime juice
Enough water to cover up to about half the ingredients in the crock pot

Cook for 4 hours on high, or 8 hours on low in the crock pot.
Take meat out of pot, slice and put back into pot to serve.
Serve with bread to sop up the liquid. (Trust me. You’ll want to.)

I know it sounds strange to put coffee in a roast, but it was great and the family kept filling their plate until it was gone!
