Carne Guisada- A Tex-Mex Favorite Using Elk Meat

Served with guacamole, lettuce, tomatoes and salsa

1 ½ lb. elk roast
¼ onion
1 Tbs. flour
¼ c water
1-8oz. can tomato sauce
1/4 tsp. garlic paste
1 bullion cube
½ tsp cumin
1 Tbs. chopped cilantro

Chop meat in bite size pieces and brown, add onion, cook until onion is done.

Sprinkle flour on meat and warm. Add water and tomato sauce while stirring constantly, mashing out any lumps. Add all seasonings and continue stirring until thick.

Serve over warm corn or flour tortillas with any taco fixins you like:
Spanish rice, refried beans, tomatoes, lettuce, cheese, guacamole, hot sauce.
